1.5kg chicken pieces
4 potatoes (quartered)
1 onion (chopped)
1 tsp cumin seeds
Curry leaves
2–3 tomatoes (blended or tinned)
1–1½ tsp salt
2–3 tsp curry powder
1 tsp Kashmiri chilli powder
1 tsp garam masala
½ tsp cumin powder
½ tsp turmeric
2 tsp ginger & garlic paste
Oil
Method
In a bowl, mix chicken with tomatoes, spices and garlic/ginger paste.
Heat oil in a large pot. Add onion, cumin seeds and curry leaves, cooking until soft.
Add marinated chicken and stir well to combine.
Reduce heat, cover and cook for 25–30 minutes, stirring occasionally.
Add potatoes and cook for a further 10–15 minutes until tender.
Finish with fresh coriander and rest briefly before serving.
Serve inside hollowed bread for traditional Bunny Chow.
