Tiramisu
150–200g ladyfingers
120ml limoncello
Juice of 3 large oranges
500g mascarpone
4 tbsp icing sugar
½ cup milk
Zest of 2 lemons
Juice of 1 lemon
80% dark chocolate (for grating)
Mixed Berry Compote
500g frozen mixed berries
50–80g golden caster sugar
Method
In a wide shallow dish, mix the orange juice and limoncello together.
Dip half of the ladyfingers briefly (3–5 seconds) until just softened, then arrange them in a single layer in your dish.
In a large bowl, beat mascarpone, icing sugar and milk until smooth.
Add lemon zest and juice, then beat again until thick and creamy.
Spread half the mascarpone mixture evenly over the biscuits.
Dip remaining biscuits and layer again.
Spread over the remaining mascarpone mixture.
Grate dark chocolate generously over the top.
Chill for at least 1 hour before serving.
