Kay Lehane's pavlova with lemon curd: Today

Pavlova
4 egg whites
200g caster sugar
1 tsp cornflour
1 tsp vinegar
1 tsp vanilla
Lemon curd
2 lemons
130g sugar
4 egg yolks
80g butter
Topping
250ml cream
Icing sugar
Fresh berries
Mint
Method
Preheat oven to 180°C, then reduce to 100°C after placing pavlova inside.
Whisk egg whites to stiff peaks, then gradually add sugar until glossy.
Fold in cornflour, vinegar and vanilla.
Shape into a nest on lined tray and bake for 1 hour. Cool completely.
Lemon curd
Cook lemon zest, juice, sugar and egg yolks over gentle heat, stirring constantly.
Once thickened, remove from heat and stir in butter. Cool.
Assembly
Whip cream with icing sugar.
Top pavlova with lemon curd, cream and fresh berries.
