If you love chocolate, you’ll want to check this out! From 16 August to 15 November 2026, The Lobby Lounge at Frasers House, a Luxury Collection Hotel, Singapore is serving its new Symphony of Chocolate Afternoon Tea, created in collaboration with premium French chocolatier Chocolaterie de L’Opéra.
The afternoon tea is a collaboration between Frasers House Executive Pastry Chef Jason Goh and Global Pastry World Champion 2022 Dexter Lee. Inspired by Chocolaterie de L’Opéra’s premium French couvertures, the menu showcases just how versatile chocolate can be, not just in desserts but even in savoury dishes.
The sweet selection features the Jamaya 73% Travel Cake, a rich chocolate mud cake layered with candied orange and smooth dark chocolate ganache.
The Spinto 70% Dark Chocolate Mousse is smooth and intensely chocolatey, with the Morello cherry adding a subtle tartness that cuts through the richness beautifully.
For something lighter, the Tannea 43% Milk Couverture Tart pairs creamy milk chocolate with apricot confit, while the Bourbon Vanilla Panna Cotta with Mango Passion Jelly offers a refreshing combination of vanilla panna cotta, tropical fruits and white chocolate cream.

One of our favourites was the Arcato 66% Chocolate Hazelnut French Choux. The crisp cocoa choux is filled with smooth chocolate diplomat cream and topped with a hazelnut praline Chantilly that isn’t overly sweet.
One of the cutest parts of the afternoon tea is the Chocolate Fondue. Alongside fresh fruits, marshmallows and dried fruits for dipping, you’ll find a tiny white chocolate bear sitting in the pool of creamy,warm chocolate, looking like it’s enjoying a hot tub.
The savouries were equally interesting, especially if you’re curious to see how chocolate works beyond desserts. The Duck Foie Gras Parfait in Tannea Chocolate Shell pairs creamy foie gras with raspberry inside a delicate milk chocolate shell, creating a surprisingly balanced bite.
The Baked Organic Beet with Passionato Chocolate Vinaigrette combines roasted beetroot with a dark chocolate vinaigrette, feta Chantilly and roasted pecans for a refreshing salad course.
The Wagyu Beef Cheek with Smoked Caviar and Arcato Chocolate features tender braised beef cheek enriched with dark chocolate, adding another layer of richness without overpowering the dish.
Rounding off the savoury selection is the Smoked Salmon & Spinach Quiche, filled with smoked salmon, spinach and cream cheese before being topped with ikura and quail egg.
The Plain English Buttermilk and Bitter Chocolate Scones are served warm with Devonshire clotted cream, blackcurrant jam and a hazelnut chocolate spread, giving you both the classic and chocolatey options.
Each dish highlights a different couverture from Chocolaterie de L’Opéra, allowing you to experience the different flavour profiles while exploring chocolate in ways you may not usually expect.
