Irish buger chain BuJo Burger to open landmark Dublin city store
Irish burger chain BuJo Burger is set to create 37 new jobs as it prepares to open its largest and most ambitious restaurant to date in Dublin city centre.
The company has announced plans for a new 5,500 sq ft flagship venue at Central Plaza on Dame Street, located within the former Central Bank Building designed by renowned architect Sam Stephenson.
The opening, scheduled for next month, will more than double BuJo’s current workforce in Ireland.
Spread across three floors, the restaurant will accommodate up to 150 diners and will feature a ground-floor outdoor terrace, with plans for a second terrace and rooftop garden on the first floor at a later stage.
Among the venue’s standout features is a live-action “Sharing Table”, an immersive dining experience for up to 10 guests overlooking a bespoke grill imported from Venice, Italy, offering diners a close-up view of the restaurant’s signature cooking process.
The flagship will also introduce several firsts for the brand, including a dedicated dessert menu and a new breakfast offering.
Breakfast service will initially operate from Friday to Sunday and will include a BuJo Breakfast Sandwich, high-protein breakfast bowls, freshly squeezed orange juice and coffee supplied by Cork-based Velo Coffee Roasters.
BuJo said the restaurant will continue its focus on Irish sourcing, with beef supplied through its own butchery in Watergrasshill, Co Cork, chicken from Manor Farm, pork from Loughnanes in Co Galway and brioche buns from Coughlan’s Artisan Bakers in Co Kildare.

Speaking ahead of the launch, owner Stephen Keating described the project as “our biggest and most ambitious project to date”, adding that it represents “the culmination of years spent refining what we believe is the ultimate burger experience”.
“We are incredibly proud of what we have created at Central Plaza and cannot wait to welcome customers through our doors next month,” he said.
