300g orecchiette pasta
200g Italian sausage
2 packs tenderstem broccoli
200g breadcrumbs
1 garlic clove
4 anchovies
Chilli flakes
Olive oil
Parmigiano
Method
Cook pasta in salted boiling water until just under al dente.
Toast breadcrumbs with anchovies in olive oil until golden and crisp. Set aside.
In a pan, heat olive oil and add garlic and chilli flakes.
Remove sausage from casing, crumble into pan and cook until browned.
Add chopped broccoli and a splash of pasta water. Cover and cook until tender.
Add drained pasta to the pan along with parmesan and a little pasta water.
Toss everything together until coated in a glossy sauce.
Serve topped with crispy breadcrumbs.
