Ahmet Dede's warm couscous salad with chicken
Ingredients
Couscous salad
. 200 gram couscous. 400 grams boiling water. 5 grams salt. 5 grams paprika powder. 5 grams black pepper. 10 grams chopped mint. 10 grams chopped parsley. 1 pomegranate seeded. 50 grams olive oil. 1 Lemon juice. Hand full of basil leaves. 100 grams dice fresh feta cheese. 50 grams pomegranate molasses
Method:
1.: Put the couscous in mixing bowl2: bring the water to boil and pour over the couscous and cover with cling film3: after 15 minutes open the film and add the lemon juice and the salt mix well4: add the olive oil and warm the couscous gently in a nonstick pan5: add the spices and fresh herbs( not the basil ) and the pomegranate mix well6: put on serving dish and finish the salad with feta and basil and drizzle of the pomegranate molasses and olive to serve
Marinated Spicy grilled chicken
. 1 large organic chicken breast. 1 tbsp yoghurt. 1 grated garlic. 1 lemon zest. Half tsp ground cumin. Half tsp Aleppo pepper. Half tsp isot pepper. Half tsp black pepper. Half tsp sumac
Method

1. Put the couscous in a mixing bowl.2: Bring the water to boil, and pour over the couscous and cover with cling film.3: After 15 minutes, open the film and add the lemon juice and the salt. Mix well.4: Add the olive oil and warm the couscous gently in a nonstick pan.5: Add the spices and fresh herbs (not the basil) and the pomegranate. Mix well.6: Place on a serving dish and finish the salad with feta and basil. Drizzle the pomegranate with molasses and olive oil to serve.
Marinated Spicy grilled chicken
1. Cut the chicken into strips and put them in a small mixing bowl.2: Add all the other ingredients into a bowl and mix well.3: Let the chicken marinate overnight.4: Heat up a grill pan or a nonstick pan.5: Add a bit of vegetable oil to the pan and cook the chicken until you have a nice colour on both sides.6: Finish cooking chicken with good-quality sea salt and lemon juice before serving.
