Ahmet Dede's Turkish Guveç Kebab
Ingredients
Guveç Kebab:
. 500 grams fatty beef mince. 1 finely diced onion. Half finely diced red pepper. Half finely diced green pepper. 2 grated garlic. 15 grams chopped fresh parsley. 1 tsp Pul biber ( Aleppo pepper). 1 tsp paprika powder. Salt and pepper to taste
For the sauce. 100 grams yoghurt. 1 tsp garlic powder. 1 tsp lemon juice. Pinch of salt. Half of grated lemon. 1 tsp cayenne pepper
To serve with it2 grilled flatbread
Method
Method to make kebab:
1. Put the beef mince in a large mixing bowl2. Add the rest of the ingredients and mix it well.3. Once it's all well mixed, put the kebab in a suitable oven dish4. Preheat oven to 220c at gas mark 65. Cook the kebab until it has a beautiful colour for around 15 mins.6. Grill or warm the flatbread on a nonstick pan with a little bit of olive oil7. Serve the kebab with yoghurt sauce and grilled flatbread.
Method to make the yoghurt sauce:
Mix all ingredients in a bowl, transfer to a container and keep in the fridge until use.
