“Dishes are judged on the visual element, taste, innovation, technique and skills, and when you speak about it, your story matters too. Where that dish came from, what it means to you,” said executive chef Bal Ajagaonkar of the Desi Indian Lounge, who landed the bronze medal at the Greater Vancouver regional qualifier for the event.
