BLUEBERRY BREAKFAST BITES
Ingredients:
3 large eggs
1 cup cottage cheese
60 grams whole milk powder
½ teaspoon baking powder
Small pinch of salt
Approximately ¾ cup blueberries
Directions:
Preheat the oven to 350°F and thoroughly grease six wells of a muffin pan.
Blend the eggs, cottage cheese, milk powder, baking powder, and salt until completely smooth.
Pour the mixture over the blueberries.
Bake for 25–28 minutes, or until the edges are lightly golden, the centers no longer appear wet, and the bites are set. Frozen or additional blueberries may require a longer baking time.
Allow the bites to cool inside the pan before carefully removing them.
*Each bite contains approximately 135 calories, 10 grams of protein, 9 grams of carbohydrates, and 6 grams of fat.
FROZEN BLUEBERRY YOGURT BARK
Ingredients:
2 cups plain yogurt or Greek yogurt
1 scoop protein powder, optional
Blueberries, as desired
Sweetener of choice, optional
Additional toppings such as cherries, strawberries, walnuts, pistachios, shredded coconut, honey, maple syrup, or melted dark chocolate, optional
Directions:
Mix the yogurt with the protein powder and optional sweetener.
Line a baking tray, cutting board, or freezer-safe dish with parchment paper or a silicone baking mat.
Spread the yogurt mixture onto the lined surface, keeping it thick enough that the finished bark will not be overly thin or fragile.
Add the blueberries and any additional toppings.
Freeze for approximately 3–4 hours, or until completely firm.
