New York-Style Bagels — Makes 8
Ingredients
* 1½ tbsp sugar
* 2 tsp dry yeast
* 300 ml lukewarm water
* 500 g strong bread flour (all-purpose flour works well too)
* 1½ tsp salt
* A little oil for greasing the bowl
* Sesame seeds, poppy seeds, or any other topping you like
Method
1. Mix half of the lukewarm water with the sugar and dry yeast. Let it sit for about 10 minutes.
2. In a large bowl, combine the flour and salt. Add the yeast mixture, then gradually add the remaining water. You may not need all of it, so add it little by little.
3. Knead until you have a soft, smooth dough that doesn’t stick to your hands.
4. Place the dough in a lightly oiled bowl, cover it with a damp kitchen towel, and leave it to rise until doubled in size.
5. Once risen, punch the dough down with your fist and let it rest for another 15 minutes.
6. Divide the dough into 8 equal pieces and shape them into balls. Make a hole in the center of each one to form the bagel shape.
7. Leave the shaped bagels to rise for another 15 minutes.
8. Bring a large pot of water to a boil. (You can add a little salt to the water if you like.) Boil the bagels two at a time for 1 minute on each side.
9. Transfer them to a baking tray lined with parchment paper and sprinkle with sesame seeds, poppy seeds, or your favorite toppings.
10. Bake in a preheated oven at 200°C / 390°F until nicely golden brown.
They stay fresh the next day too — just wrap them well in plastic wrap once completely cooled
Fig Jam Tart (Pasta Flora)
Ingredients
500 g self-rising flour
1 cup corn oil or sunflower oil
1/3 cup sugar
1/3 cup orange juice
2 tbsp cognac
1/4 tsp cinnamon
About 500 g fig jam
Mix the flour, oil, sugar, orange juice, cognac and cinnamon together until a soft dough forms.
Set aside a small amount of the dough for decorating the top. Press the remaining dough evenly into a 28–30 cm tart pan, covering the bottom and slightly up the sides.
Spread the fig jam evenly over the dough.
Use the reserved dough to make strips and arrange them on top of the tart in a lattice pattern.
Bake in a preheated oven at 180°C (350°F) for about 35 minutes, or until the crust is lightly golden.
Let it cool before slicing and serving. 🍯🧡
