More than 20 dishes. One banana leaf. Thousands of diners. Welcome to the extraordinary world of the Onam Sadya. At the heart of Kerala’s biggest festival is one of India’s most elaborate vegetarian meals. Traditionally served on a banana leaf, Sadya brings together rice, curries, vegetables, pickles, papad, chutneys and desserts in a feast that can include 26 dishes or more. We experience Sadya in a massive temple celebration in New Delhi.
The Uttara Guruvayurappan Temple in Mayur Vihar, is a major centre for Kerala’s community in New Delhi. Established in 1983, the temple comes alive during Onam with traditional clothing, floral decorations and an elaborate pookalam welcoming visitors. But downstairs, an even bigger operation is underway. Temple organisers expect to serve more than 10,000 people during the celebrations, with over 1,200 guests capable of eating during a single sitting across the dining areas. More than 100 chefs and volunteers work together to prepare and serve the meal.
Huge carts carrying rice move through the dining hall, followed by volunteers rapidly serving dal, sambar and dozens of accompaniments. Tables are cleared and reset almost immediately as the next group of diners arrives. And the refills? Unlimited. We join hundreds of guests inside the hall to experience the speed, organisation and extraordinary scale of this community feast first-hand. Onam is Kerala’s annual harvest festival and celebrates the legendary King Mahabali.
During the ten-day festival, communities create floral pookalams, hold cultural performances and gather with family. The main celebration comes on Thiruvonam, when Sadhya takes centre stage. Rice, coconut, seasonal vegetables and spices form the foundation of the meal, with each preparation traditionally occupying its own place on the banana leaf.
