Slow Cooker Mini Cheesecake
Cooking spray, for the pan
3/4 cups graham cracker crumbs
3 Tablespoons melted butter
1/2 cup plus 1 Tablespoon sugar, divided
1/4 teaspoon salt, divided
2 blocks (8 ounces each) cream cheese, room temperature
2 eggs
1/3 cup sour cream
1 Tablespoon all-purpose flour
1 teaspoon vanilla
Strawberry (or blueberry or cherry) pie filling, optional
Spray a 6-inch springform pan with non-stuck spray and wrap the outside tightly with two layers of foil. In your slow cooker, pour in 1-inch of water. Create a foil ring or use a slow cooker rack in the bottom that will keep the cheesecake just above the water level.
In a bowl, stir together the graham cracker crumbs, butter, 1 Tablespoon of the sugar, and 1/8 teaspoon of salt. Press into the bottom of the greased pan for the cheesecake crust and set aside.
In a second bowl, use a hand mixer to beat the cream cheese with the remaining 1/4 cup of sugar, eggs, sour cream, flour, vanilla, and the remaining 1/8 teaspoon of salt. Beat until combined.
Pour the cheesecake filling over the crust. Place on the rack in the slow cooker. Top the slow cooker with two layers of paper towels and the lid. Cook on high for two hours, then turn the slow cooker off and let it stand for one hour.
Remove the cheesecake from the slow cooker. Remove the foil from the pan. Refrigerate the cheesecake until it is completely chilled, at least four hours.
Top with the pie filling of your choice if desired.
