Hello everyone ♥️ I tried making a simple Greek chicken skewer and homemade pita at home but it ended up taking me two hours to make 🥴 But it was sooo worth it!! I also did a healthy cherry cheesecake and kefir pancakes 🤤 We did some shopping for our new apartment too 🎉🥳 I hope you’ll enjoy today’s video and find some time for you and relax 😌♥️Thank you all so much for watching ♥️♥️

Chicken Souvlaki / Chicken Skewers
Ingredients for the chicken skewers
3 chicken breast fillets
Rosemary sprigs
For the marinade
2 onions
2 tomatoes
2 tbsp finely chopped parsley
1 tbsp finely chopped mint
2 tbsp olive oil
2 tbsp yogurt
1 tbsp balsamic vinegar
Salt
Pepper
Instructions

First, blend the onions, tomatoes, and herbs until they turn into a smooth paste.
Add the yogurt, olive oil, and balsamic vinegar, and mix everything well.
Cut the chicken into small pieces and place it in a bowl.
Season with salt and pepper, then pour the marinade over the chicken. Mix well until all the chicken pieces are fully coated.
Cover the bowl and let it marinate in the fridge for at least 2 hours, ideally 12 hours.
Clean the rosemary sprigs halfway down and thread 2–3 pieces of chicken onto each sprig.
Cook the skewers on a grill or grill pan for about 5 minutes on each side, until they are nicely browned but still juicy.
Preheat the oven to 200°C fan, or 210°C conventional.
Line a baking tray with parchment paper and place the chicken skewers on top.
Bake for 20–25 minutes in total.
Halfway through, after about 12 minutes, turn the skewers over so they cook evenly.

Homemade Pita Bread
Ingredients
500 g all-purpose flour
300 g lukewarm water
9 g dry yeast
1 tbsp sugar
1 tbsp olive oil
1 tbsp white vinegar
1½ tsp salt
½ tsp oregano
Instructions

In a bowl, add the lukewarm water, dry yeast, sugar, vinegar, and olive oil.
Add half of the flour and mix until you have a smooth batter.
To create a warm proofing environment, turn the oven on at 100°C for 1 minute, then turn it off.
Place the batter inside the warm oven and let it rise until doubled in size.
Add the remaining flour and the salt, then knead until you have a soft, pliable dough.
Let the dough rest again in the warm oven until it doubles in size.
Divide the dough into 9 pieces, about 100 g each.
Roll out each piece with a rolling pin.
Using the handle of a wooden spoon, make small indentations on the surface of each pita so they cook better.
Crumple a piece of parchment paper, wet it slightly, and place it in a pan, making sure it doesn’t stick out from the edges.
Brush one side of the pita with olive oil and place it in the pan, oiled side down.
Cook over low heat until the pita turns golden.
Brush the other side with olive oil, flip it, and cook until golden on the other side too.
Repeat the same process with the remaining pitas.

Tomato Sauce

1 small grated tomato
2–3 tbsp water
1 tbsp red vinegar
1 small garlic clove, crushed
