TACO TIP: If you don’t have a griddle to cook your taco meat, use a cast-iron skillet instead. Place a mound of beef between 2 squares of parchment paper (at least 6 inches on each side). Using a metal spatula or your hands, flatten beef to a thin patty about 1/2 inch larger than a tortilla. Repeat with remaining mounds, leaving beef on parchment. Cook in batches in a cast-iron skillet on medium-high as directed.
